I am from Brittany, like this little devil “sweet bread” and if you haven’t had the pleasure to taste it, please do yourself a favor and have one (or two)!!! 🤤

The Kouign-Amann, a name that literally means “butter cake” in Breton, is a specialty from the town of Douarnenez in Brittany, France. Created in the 19th century, this cake is the result of a happy accident. According to legend, a baker from Douarnenez was low on flour one day in 1860 but had plenty of butter and sugar. He decided to make a dough similar to bread dough, folding it repeatedly with butter and sugar.

The result was a cake with a crispy, caramelized exterior and a soft, buttery center. The Kouign-Amann quickly became popular in Brittany and, over time, gained recognition far beyond France. Today, this cake is enjoyed worldwide for its unique texture and rich buttery, caramel flavor.

When life gives you peaches, make a peach tart!!!! Another dessert for a beautiful evening under @chefamandaf’s delightful menu (thank you @zincagency for having me 😘). Peach tart with a thin layer of frangipane (really to keep the fruit in place and avoid the pate brisée from becoming wet), brushed with peach jam to give some shine and a bit of sweetness… I marinated the peaches in some lemon juice/zests and a bit of sugar for 1 hour, it gives a very floral taste and intensifies the peach flavor! @chefamandaf and chef aarondiener, you both rock!! Tarte Sucrée with Black Sesame Frangipane, Strawberry Lemon Compote, Fresh Strawberry with a Strawberry Lemon Chantilly.
